A subtle vegetable starter, designed as a gentle cleansing gesture after the excesses of the festive season. Freshness, minerality, botanical infusion: a real reset for the body.
Ingredients:
- Chioggia beetroot
- Cashews soaked overnight
- Gluten-free brewer's yeast (Dietaroma)
- Organic lemon (juice and zest)
- Winter root vegetable broth, leek, thyme, and bay leaf
- 1 ampoule of Holidermie Detox Concentrate Drainant
Preparation:
Slice the beet very thinly with a mandolin, then cut out circles with a cookie cutter.
Blend the cashews with the brewer's yeast, lemon juice, and zest to make a vegan cream cheese.
Place a dollop of cream cheese on each beet circle and close the ravioli.
Prepare a winter root vegetable broth and infuse with a vial of Holidermie Detox Concentrate.
Serve the broth in a deep plate around the ravioli.
